Cranberry Waffles

Serves 6

  • 1 egg
  • 2 tbs oil
  • 1 tbs vanilla
  • 1 cup milk (any kind)
  • 1 cup water (or enough water to thin out mix)
  • 1/4 cup dried cranberries
  • 3 cups waffle mix (the kind that needs only water) Krusteaz is good choice.

These are quick & easy to make because they use a waffle/pancake mix that most have on hand and taste great because you add all the same ingredients as those made with just flour.

Cover cranberries with water in glass measuring cup and put in microwave for one minute and set aside.

Mix egg, oil, vanilla, and milk. Add 3 cups waffle mix and then add enough water that will thin out mix (about a cup). Drain cranberries and drop onto top of batter after you have poured each into waffle maker.

Pancakes can also be made; drop cranberries onto each pancake before you turn them over.

Keep waffles warm in oven set at 300. Serve with warm maple syrup and melted butter.
